I think I mentioned that Santa had brought me a couple of new Vegan cookbooks for Christmas, yes? And I think I had also mentioned that this girl here spent most of last weeks snow days in doors with the babe, yes? Well, if that isn't the perfect opportunity to do some baking, then I don't know what! So my first attempt: Vegan Chocolate Cupcakes {perfection, if I say so myself} with Vegan Orange {flavored with OJ, not colored} icing. I need to work on the thickness of my icing...too much OJ, I think. But they tasted amazing...I ate 5.xo.
