I think perhaps I could live on this meal ...

I am still riding the high from completing and posting my first { & largest} painting in the series, Children of Lir yesterday. However, few days ago, I was not feeling all that fantabulous. On the contratry, I felt down right lousy. My three children seemed determined to drive me insane from morning until night for what seemed like days on end. I was loathing the kind of mama I was being + we needed to have a family pow wow to all get back on the same page. Know what I mean? My wonderful mister decided I needed a bit of cheering up, so after giving the wee ones a bit of a lecture, he headed for the kitchen to make this most wonderful meal. I did not have a post planned for today, then it occured to me as I sat quite smitten with myself, popping forkfuls of gladness in a bowl into my mouth that I needed to share the joy...

The Tomato Pesto recipe calls for:
4 lg tomatoes ( I blend half of them into the sauce and allow the other half to stay slightly in pieces)
6 fresh basil leaves
2 cloves of garlic
1/4 tsp. red pepper flakes
(this is not a spicey dish, but add less if you're unsure, you can always put in more the next time you make it)
1/2 cup extra virgin olive oil
1/2 cup of cream
(or 1/2 and 1/2...if you use milk, just add splahes until it is creamy, but not too thin)
1/2 cup of grated parmesan cheese
1 tsp of salt & pepper

Mix all ingredients in a food processor or blender. Cook pasta according to directions and drain. Mix the hot pasta into the sauce and serve immediately

No special alison/ mama meal could be complete without one of my most favourite desserts from when I was a little...
{Mr. Mytnick, you have earned yourself some serious brownie...or should I say, petit four points!} I truly was not joking when I typed that I could quite possibly live on this meal. I do hope you enjoy this dish as much as I do + as always, thanks for all of your kind words.     I forgot about this recipe! I tried it a couple times last year and loved it, but never wrote it down!
    That's what we're having tonight, but I am going to add some homemade meatballs!
